Reception on the sorting table. Traditional vinification (pressing, alcoholic fermentation, malolactic fermentation and aging in tanks).
3 to 10 years
Selected on vines aged over 40 years and matured in recent recent Burgundian barrels (1-5 years). Slightly woody, it combines size and roundness in the mouth.
Bright straw yellow eye. The first nose shines with richness and depth. Both tender and charming the nose reminds you of fully ripe yellow and white flesh fruits. The palate is first about a neater, firmer and tenser true to Chablis side. After a couple seconds the old vines and the demi-muids afeing are taking over to bring back what was felt on the nose. Thee beautiful balance makes sure the mouth lingers and refines on that traditional hint of minerality to basically refresh the experience.
Our culinary advice
It is perfect with poultry and creamy cheeses.
